I heard the red sauce for pastadishes should have the same wine you will drink with your meal. In the past, this has been a Cab S. After watching videos about Chianti and red sauce, I just bought a bottle of Classico plus a Classico Riserva for my next batch of spaghetti and meatballs. Should I add the Chianti to the sauce or continue with the Cab?
Hahaha, indeed it is one of the food and wine pairing rules that one should enjoy the dish with the same wine You were cooking it. However, I usually choose a bit lesser wine for the cooking and a nicer wine in my glass. Chianti will definitely add more acidity to the sauce! 🍷

Very nice video. I took their Estate Collection tasting in 2022, including the FAY, the SLV and the Cask 23. Really exceptional wines, the best I had on my short visit to Napa and among the best I’ve ever tasted.

Not convinced that the altitude of Rioja is higher than that of Ribera del Duero. Also, it seems to me that the oak plays a bigger role in Rioja, but this could be very personal. Nevertheless, I like this kind of comparison pretty much
No, You are very correct, the altitude was my error. 🤦♀️ However, while ageing wine in oak is usually more linked with Rioja, I think new oak as a flavour/element in wine is more prominent in Ribera del Duero! 😅

I am not completely convinced that in 1970ties it was the marketing that played the role into their wines quality. I am sure it is much more important now.
I've bought two bottles of the same wine. One I extracted one glass with the Coravin and the other one I kept it closed. After 4 weeks I opened the two bottles and did a serie of blind tastes and all times I could tell which one was the Coravin and which one was the fresh opened bottle. But importantly both wines were good to drink.
That is such a nice experiment. I should actually do the same! 💪 the most important part though - is that the wines were good to drink! 🍷 cheers! 🥂
Yes various so called experts have attempted to " Shame me " over the years because i quite happen to like sweet wines , as far as i am concerned , its my personal taste , my personal enjoyment and at the end of the day , i never seen or met any of the " Ney sayers " in any chablis cave when i was a teenager and I have been in just about every one even by the tender age of 11 years old ! , People are just pratts , good for you to point out the bloody obvious , LOLOLOLOL ......... No Sugar ..... No fucking wine ! xxxx

We celebrated paying off our house with a 2013 Stag's Leap Cask 23. It remains one of the best Napa Cabs we've ever had. Side note - the 2019 Stag's Leap Merlot is amazing! 🍷
I have tasted Cask 23 only few times. It is significantly more expensive though. Next time I will have a chance will make sure to taste the Merlot as well! 🙌

I don’t know, it depends on the vintage. I do like Comtes de Champagne, they manage to deliver outstanding quality vintage after vintage. Salon has been my favourite for a while, while I could afford it. 🍾

The SLV is a gorgeous wine, but will show better in the 2013 & 2014 vintages. After the poor vintage of 2011, many producers chose to hang more fruit and made wines that drink better early. As a collector of Stag’s Leap Wine Cellars wine, I prefer the Cask 23 a bit over the SLV, but hold both in my cellar. For a real treat and expression of the AVA, try to find a 2013-2014 Hartwell T5 Cabernet (now owned by Realm). Side by side with the SLV, you might be surprised.
Do You that Stag’s Leap Wine Cellars also did that? Overcropped their wines? The concentration and depth was still there. 🤔
@@NoSediment I have no real evidence that SLWC overproduced, but it was fairly widespread. Personally, I prefer the a lot of wines from the so called "poor" 2011 vintage over 2012 as they have really come into focus with 12+ years in the bottle. After sampling many different producers from all over the Napa and Sonoma AVAs, 2011 and 2013 are aging far better than 2012. We recently drank a 2011 Altagracia red wine from Eisele, then Araujo, in the Calistoga AVA and it was outstanding. Perhaps it's a personal preference as my palate has changed and I find Bordeaux wines to my liking over many younger California wines as the made by "super consultants" (Melka, Bevan, etc.).

Have you read the story about "Stag's" Leap and "Stags' " (apostrophe after the s) Leap? Both established in the Stags Leap district and called "Stag's Leap". They fought over the name and it went all the way to the Supreme Court of CA and the final ruling was the placement of the apostrophes would distinguish the two, with Winiarski getting the apostrophe before the "s". Both are great wineries, but I lean towards "Stag's Leap" for same reasons you mention in the video.

Great bit of Napa history! Another California Cab at the Judgement of Paris tasting was Heitz Martha's Vineyard. Single grape variety from a single vineyard, which was quite an unusual approach to winemaking back in that day. It is my personal favourite when it comes to Napa Cabs. Hard to find and certainly not cheap, but would be well worth reviewing if you come across a bottle.

Tried SLV, Fay and others at their tasting room last month when I visited Napa for the first time. SLV was my favorite of the tasting but wow the price! Still excellent though.
I think Napa, just like Burgundy in general is more expensive than other premium winemaking regions. If You compare to other labels the price might even seem okay for such a wine with an incredible story. 🫣
@@NoSediment I would agree with you. I am finding that where I live the U.S.A. I can purchase a lot of great Bordeaux wines at a lot lower price than comparable critical scoring Napa Valley Cabernets. And a lot of the Bordeaux are drinkable now and do not require a lot of age to be enjoyable to drink.

Didn't know Spurrier passed actually. 2021 RIP. He drank a minimum of one bottle every day if memory serves. Also the Stag's Leap guy was actually named Winiarski! That's kind of like a dentist named Rootcanalski 😄 PS: You should have had one of the Paris bottles.

@@NoSediment But Paris wasn't about popularity wine at all, which leaves me to wonder just how much American wine making was _actually_ elevated. Were the Napa bottles there anomalous? We all know how good the Americans are at hype and marketing, and their whole industry has basically been milking that contest for almost 50 years. But how real is it today, and how real was it ever? Can experienced wine tasters still not differentiate between French quality wine and American?

Well, I want people to be descriptive and I want people to use terms relevant to the world of wine and I want those people to be experienced and knowledgeable. And although I can’t afford the 1945 Romanee Conti, sometimes it’s fun to read those tasting notes, so I’m fine with not being able to obtain everything under the sun that people describe. What I dislike is how out of reality the descriptions get. When Im looking for guidance on buying a bottle of Champagne, for example, words that help me are acidity, creamy, mousse, dry, fruits, caramel, toasted bread, etc… Burnt leather, asphalt, and chalk are NOT helpful words. I say, keep the descriptions so that anyone can understand them from wine lovers like Giorgio Pinchiorri with a 100 million dollar cellar to me, someone with a love of food and wine and with means to indulge on a more modest level, and then also to someone on the street who has never touched wine before. Shouldn’t they too be able to visualize? EDIT: Btw, Agnes, you are great with your descriptions😉
I’m looking at either the 1975 or 1985 Bollinger RD amongst other choices for a special dinner coming up, and I’m unfamiliar with the brand. Any thoughts on what such an aged vintage has to offer from the brand? Any thoughts from others, especially those who have drunk those specific vintages, are welcome!

This was a particularly good video about a challenging topic. Crowd reviews of wine are fraught with unfairly high and low ratings that, depending on the wine, do not “wash.” A 5 point scale is also hard to gauge and I expect most wines that otherwise ought to be above 4 will find themselves in the high 3’s. Your video does raise a good question, though, what makes a good wine app for managing one’s wine collection and do you have a favorite?

I don't care much about Champagne, I consider Krug the best of the big ones but being Italian I worry about drinking serious "bubbles" at home. In this case, considering that Chardonnay makes me run to the bathroom because it is so feminine and fashionable (I hate it), I vote for Pinot Noir so I enjoy the so-called Blanc de Noirs from Oltrepò Pavese, the only champenoise method without Chardonnay but only excellent Pinot Noir. In the other three Italian areas renowned for sparkling wines: Trento and Franciacorta (Champenoise) always mostly use that terrible grape variety and in the Veneto area (Charmat) they insist on that rubbish called Prosecco (Glera grape variety).
The Aube single-parcel pinot noir from the Largillier plot of Jerome Coessens is worth seeking out! Guillaume Selosse has an allocation from the same lieu-dit, but Coessens is at a fraction of the price.😍
For me Krug has characteristics unattainable by both and when I evaluate Champagne wines it is always my point of reference. I find Crystal excellent but very "pimp", ideally approachable by a joyful company of friends while Krug has such a demanding complexity that I would not recommend it to those who like to distract themselves with a glass in hand but only to those who want to try a unique organoleptic experience. The Dom is exactly halfway between the two because it combines freshness and fun with an aristocratic personality and great depht.
Great point about climate change affecting the classified vineyards. I now look for cooler vineyards in hot vintages, which tends to be more and more frequent unfortunately
